A thousand years under Chinese rule. A hundred years under French colonial power. Twenty years of civil war.

And through all of it — the Vietnamese people cooked. They adapted. They created. What colonisation could not take was the kitchen.

This is the foundation of our cuisine. And it is why every dish we serve carries a weight and a depth that goes far beyond the plate.

This is where Nuance began.

Phở was never meant to be elegant. It was born in the chaos of French colonial occupation — a fusion of Vietnamese bone broth tradition and the beef bones the French left behind. A culture that had nothing made something extraordinary from scraps. That is Vietnam.

What looks simple is the result of extraordinary patience. We simmer marrow bones for 24 hours with charred ginger, roasted onion, star anise, cinnamon, and cardamom until the broth becomes something between a soup and a ceremony. Not just a dish — a lesson in what intention can create from humble beginnings.

At the table, guests customise their own bowl — adding fresh bean sprouts, Thai basil, lime, and chilli. It is interactive, generous, and communal. This is Vietnamese hospitality made edible.

Every bowl we serve carries that history. That refusal to take shortcuts. That quiet insistence that nothing worth having can be rushed.

Heo Quay is a lesson in transformation.

Pork belly begins as something humble. What follows is an overnight marinade in lemongrass, garlic, five spice, and fish sauce. Then resting. Then high heat. Then the sound that Vietnamese cooks listen for — the crackle of skin turning from soft to extraordinary.

A legacy of French colonial Vietnam made entirely Vietnamese — the Bánh Mì is an artisan baguette filled with house-made pâté, grilled meats, pickled daikon and carrot, fresh coriander, and chilli. Served at our corporate events as a crowd favourite that never fails to impress.

Fish slowly braised in a clay pot with caramel sauce, ginger, and chilli until it becomes lacquered and intensely flavoured. One of the most distinctive techniques in Vietnamese home cooking — and one of our most requested dishes.
